For the Veggie Peanut Tikki
¼ cup roasted peanuts, coarsely ground
1 large potato, boiled, peeled and mashed
¼ cup carrots, grated
3 tbsp chopped capsicum
3 tbsp peas
Salt to taste
1-2 green chilies, minced
1 tsp grated ginger
1 tsp garlic paste
½ tsp red chili powder
2 tbsp oil for pan frying
To Assemble
2 tbsp ketchup
Thinly sliced onions, tomato and lettuce
Method
Step 1
In a large bowl, add the mashed potato, grated carrots, chopped capsicum, boiled peas, minced green chili, grated ginger and garlic paste. Add the salt and red chili powder and half of the roasted peanuts.
Step 2
Mix it nicely and using your hands form 6 equal smooth balls. Stick the rest of the roasted peanuts on one side of the tikkis.
Step 3
Place the prepared tikkis in a heated nonstick pan and drizzle some oil over them. Fry them till they are golden in colour on both sides. When done, take them off heat and set aside.
Step 4
Take a chapati or tortilla wrap. Spread some ketchup. Place 2 tikkis in the centre; add some sliced onion, tomato and lettuce. Drizzle a little more ketchup and roll the edges to form a wrap.
Step 5
Pack it into your kid’s lunch box along with some salad. Pack an extra ketchup sachet.
