2. Avoid Ejaculation to Augment Sperm Count

6. Avoid Low Glycemic Index Foods, Alcohol and Caffeine
The glycemic index (GI) is a ranking system to classify foods depending on how easily they are digested by the body. Lower the GI, the slower they are digested, thereby ensuring a gradual yet steady supply of energy. This is crucial for maintaining healthy blood glucose levels and reducing weight. Legumes, whole grains, low-fat dairy products, broccoli, sweet potato and mushrooms are some of the foods in this category. Processed foods and their associated oils and sugars have a high GI and are bad for the body. They elevate inflammation, affect hormone levels in the body and negatively affect the immune system.
Alcohol is a teratogen (substance or factor that induces malformations in the foetus) and severely detrimental to the development of the foetus, therefore it must be avoided at all costs. Also on the list of things to avoid is smoking. If you have an addiction toward it, talk to your doctor before going for IVF treatments. Caffeine is also found to adversely affect the developing foetus. No more than 200mg should be taken per day during pregnancy. Ideally, it is better to avoid it during and after your IVF treatment.
7. Have Sex After the Procedure
Although some experts advise against it, studies have found that having sexual intercourse after a procedure can improve the success of your IVF to some extent. The reasoning behind this tip is that the natural hormones and chemicals released during sex can help the chances of conception. You should get your fertility expert’s opinion before going ahead.
8. Talk To a Counsellor
Your mental health significantly affects your chances of conception. IVF can take a toll on your emotional well-being so be prepared for the roller-coaster ride. Talk to a counsellor about your hopes, and fears. Ensure that your spouse, close friends and family support you throughout the entire process.
9. Avoid Vigorous Exercise
While it is essential to work out and maintain good health, strenuous exercise can reduce fertility levels in women and decrease their rates of conception. Heavy exercise is also twice as likely to cause implantation failure and pregnancy loss. Therefore go easy around your IVF procedures and opt for low-intensity exercises such as walking, yoga or swimming.
10. Get Plenty of Sleep

Sleeping in total darkness helps to regulate the melatonin levels in the body improve your physical and emotional well-being. It also helps in the development of healthy follicles for your IVF.
11. Maintain a Healthy Weight
Your Body Mass Index (BMI) influences your chances of IVF success. Being obese (BMI>35) or underweight (BMI<19) can increase the difficulty of conception by 2 and 4 times respectively. Being overweight can also lead to complications with the procedure. 12. Quit Smoking

Oats - 2 cups
Onion (chopped) - 1/4th cup
Ginger (finely minced) - 2-3 tbsp

French beans (chopped) - 1/4th cup
Cauliflower (cut into small florets) - 1/4th cup
Tomatoes (chopped) - ½ cup
Green chilli (finely chopped) - 2-3 tbsp
Coriander leaves (finely chopped) - 1/4th cup
Ghee - 2-3 tbsp
Turmeric powder - 1 tsp
Chilli powder - 1 tsp
Curry leaves - 4-5
Channa dal - 2 tbsp
Mustard seeds - 1 tsp

How to Make
Heat 1 tbsp of ghee in a non-stick pan. Once the ghee is hot, sauté the oats until they turn light brown in colour.
Transfer the oats to a bowl and pour 2-3 tbsp of ghee in the same pan.
Add the mustard seeds, curry leaves, chopped onions, and ginger and sauté until the onions turn golden brown.
Add all the vegetables and cook them. Don't add tomatoes.
Once they are almost cooked, add the tomatoes and a little salt.
Then add the turmeric powder and chilli powder, and give it a nice stir.
Add 2 cups of hot water in it then add the oats.
Stir it a bit, put a lid and let it cook for 4-5 minutes on a low flame.
Once cooked, turn off the flame and garnish it with the coriander leaves.
2. Dalia
Dalia is basically broken wheat and it is one of the best Indian breakfasts for weight loss. Since it is a good source of fibre and protein, it can keep you full for longer and prevent you from eating more. Eating dalia can also help in increasing your metabolic rate.
What You Need
Dalia - ½ cup
Moong dal - 1/4th cup
Ginger (finely minced) - 1 tbsp
Carrots (diced) - 2 tbsp
Green peas - 1/4th cup
French beans (chopped) - 2-3 tbsp
Onion (chopped) - 1/4th cup
A tomato (chopped) - 1/4th cup
Cumin seeds - 1 tsp
Tumeric powder - 1 tbsp
Ghee - 2 tbsp
1 bay leaf
1 dried red chilli
Salt to taste
Water
How to Make
Wash and soak the dalia in water for half an hour.
Wash the moong dal and soak it in water.
Heat some ghee in a pressure cooker; once the ghee is hot, add the cumin seeds, bay leaf, and dried red chilli to it.
Then add the chopped onions and ginger, and sauté until the onions turn golden brown.
Then add the vegetables one by one.
Mix the vegetables well then add the turmeric powder and chopped tomatoes.
Strain the water from the dal and dalia.
Add both to the pressure cooker and add 1 ½ cup of hot water.
Add salt and let it cook for three whistles.
3. Paneer Paratha
Surprised to know that paneer parathas help in weight loss? This is because paneer is low on sugar and cholesterol and rich in calcium and protein. Paneer helps in keeping the stomach full for a longer period, therefore, curbing your chances of eating unhealthy foods.
What You Need
Multigrain flour - 1 cup
Paneer (grated) - 1 cup
Onion (diced) - 1/4th cup
Green chilli (finely chopped) - 1-2 tbsp
Ginger (finely minced) - 1-2 tbsp
Chilli powder - 2 tsp
Coriander leaves (finely chopped) - 2-3 tbsp
Salt to taste
Ghee - 4-5 tbsp
Water as required
How to Make
Take the multigrain flour in a large bowl and add water to it to knead a dough. Keep it aside.
In another bowl, mix the paneer, chopped onions, chilli, chilli powder, ginger, coriander leaves, and salt.
Take a small ball from the dough, make a depression in the middle, and keep some paneer filling on it.
Seal it and roll it out.
Place the rolled out paratha on a hot tawa.
Cook the paratha from one side then flip it and add some ghee on top. Let it cook from the other side.
Let it cook well from both the sides on a low flame until golden brown.
4. Ragi Dosa
South Indian cuisine has several weight loss breakfast recipes for vegetarians out of which the ragi dosa is one of the best. Ragi is a healthy grain. It is low on the glycemic index and rich in calcium and protein.
What You Need
Ragi grains - 1 cup
Urad dal - 1/4th cup
An onion cut into half
Salt to taste
Ghee
How to Make
Soak ragi and urad dal in two separate vessels overnight.
In the morning, grind both of them separately.
Mix them in a bowl and some salt to it.
Let it ferment for 6-8 hours.
Heat a non-stick tawa and pour a teaspoon of ghee on it, and spread it with the onion.
Take some batter, pour it on the hot tawa and spread it evenly all over.
Lower the flame and let it cook.
After sometime flip it to the other side and cook it.
Serve it with tomato and green chilli chutney.
5. Egg Bhurji
Egg bhurji is one of the healthiest breakfast options. It can be eaten as an accompaniment with chapati, paratha, or bread. For weight loss, make egg bhurji with only the white of egg and ghee instead of the usual vegetable oil.
What You Need
Egg whites - 2
Onion (diced) - 1/4th cup
Green chilli (chopped) - 1 tbsp
Capsicum (diced) - 2-3 tbsp
Carrots (diced): 2-3 tbsp
Tomatoes (diced) - 1/4th cup
Ginger (finely minced) - 1 tsp
Coriander leaves (finely chopped) - 2-3 tbsp
Garam masala powder - 1/4th tsp
Salt to taste
Ghee for frying
How to Make
Heat 2-3 tbsp of ghee in a non-stick tawa.
Once the ghee is hot, add the chopped onions, green chilli, and ginger.
Once the onions turn golden brown, add the vegetables and fry them for 2-3 minutes on low flame.
Whisk the egg whites and add them to the fried vegetables.
Add the salt and garam masala powder to it and scramble the eggs.
Garnish with coriander leaves.

दिवाली आने वाली है। दिवाली पर सबसे ज्यादा चिंता होती है सफाई की। दिवाली की सफाई पर तरह-तरह के चुटकुले तो आप पढ़ ही चुकी होंगी। तो आज मैं आपके साथ कुछ टिप्स शेयर करना चाहती हूँ जिससे आपके घर की सफाई चुटकियों में हो जाएगी।
घर को जगमगाने से पहले कुछ टिप्स आपके अपने लिए:
धूल के कण और जालों से एलर्जी की समस्या हो सकती हैं। चेहरे की त्वचा बहुत संवेदनशील होती है। धूल और गंदगी से चेहरे और बालों को नुकसान पहुंच सकता है।
सफाई करने से पहले करें स्वयं की तैयारी:
1- बालों में तेल लगा कर हेयर मास्क लगा लें।
2- चेहरे पर क्रीम लगाकर कपड़े से ढक लें।
3- हाथों में दस्ताने पहन लें।
अब करते हैं सफाई की शुरुआत:
रुकिए! सफाई करने से पहले गैर जरूरी तथा फालतू सामान हटा दें।
1- दिवाली के बाद ही सर्दियों का मौसम शुरू हो जाता है। अतः गर्मियों के कपड़े अभी से छाँट कर अलग कर लें।
2- पुराने तथा बेकार कपड़े और बच्चों के छोटे कपड़े किसी जरूरतमंद को दे दें।
3- घर में पड़े पुराने या टूटे सामान जिसे आप बहुत दिनों से हटाना चाहते थे उन्हें निकालने का यह सबसे सही समय है।
4- बरसात के बाद अलमारी में रखे कपड़ों से सीलन की बदबू आती है लगे हाथ इन कपड़ों को भी धूप दिखा दें।
सफाई के लिए जरूरी सामान की लिस्ट:

अब करें सफाई की शुरुआत:
एक ही दिन में पूरे घर की सफाई के बारे में ना सोचें। कमरों, बाथरूम तथा किचन की सफाई के लिए अलग-अलग दिन बांट लें।
कमरों और ड्राइंग रूम की सफाई :
1- दिवाली में यदि आप नए पर्दे लेने का सोच रहीं है तो पुराने परदों को धोकर अलग रख लें और यदि पुराने पर्दे ही इस्तेमाल करने हैं तो उन्हें प्रेस करके रख लें। नए पर्दे लेने का विचार नहीं है तो बेडरूम और ड्राइंग रूम के परदों को मैचिंग करके नया लुक दे सकती है।
2- परदें निकालकर सबसे पहले जाले साफ करें। जाले साफ करते समय आंखों का विशेष ध्यान रखें। सबसे बेहतर होगा कि आंखों में चश्मा लगा लें।
3- जाले साफ करने के बाद पंखों की सफाई करें। पंखों को साफ करने से पहले बेड पर पुरानी बेडशीट बिछा लें। गरम पानी में डिटर्जेंट मिलाकर उसमें भीगे कपड़े से पंखों की सफाई करें।
4- खिड़की, दरवाजों को पहले सूखे कपड़े या झाड़ू से झाड़ कर साबुन के पानी में भीगे कपड़े से साफ करें। कांच की खिड़की को कॉलिन से साफ करें।
5- टीवी, कंप्यूटर और आर्टिफिशियल फ्लॉवर्स को फेदर डस्टर से साफ करें।
सोफे की सफाई:
1- सोफे को सबसे पहले फेदर डस्टर से साफ करें। महीन नक्काशी वाले सोफे हैं तो उन्हें ब्रश से साफ कर लें।
2- कुशन कवर और सोफा कवर को धोने के लिए निकाल दें।
3- सोफे के गद्दो और कारपेट को वेक्यूम क्लीनर से साफ कर लें।
4- लेदर के सोफे को साफ करने के लिए वेसलीन लगाकर फलालीन डस्टर से हल्के हाथों से रगड़ें। आपका सोफा चमक जाएगा।
5- लकड़ी के फर्नीचर को मेयोनीज या ऑलिव ऑयल लगाकर साफ कपड़े से रगड़ लें। फर्नीचर नया लगने लगेगा।
किचन की सफाई:
1- किचन के डिब्बों को खाली करके डिटर्जेंट वाले पानी से साफ कर लें। इस पानी में थोड़ा सा बेकिंग सोडा भी डाल दें।
2- किचन के स्लैब और सिंक को बाथरूम क्लीनर से भी साफ कर सकते हैं।
3- किचन के फर्श को डिटर्जेंट से साफ करें।
4- चिमनी को साफ करने के लिए डिटर्जेंट के पानी में भीगे हुए कपड़े से साफ करें।
बाथरूम की सफाई:
1- बाल्टी, मग, शोप केस तथा टूथपेस्ट होल्डर को स्क्रब से अच्छे से साफ करके सुखा लें।
2- शावर, बाथ टब, और नल में यदि पानी का दाग लग गया है तो दाग में आधे घंटे के लिए सिरका लगाकर छोड़ दें और फिर स्क्रब से रगड़ने से दाग चले जाएंगे।
3- बाथरूम में लगे शीशे को साफ करने के लिए शीशे में टूथपेस्ट लगाकर थोड़ी देर के लिए छोड़ दें फिर अखबार को हल्का गीला करके अच्छे से पोंछ ले, आईना चमकने लगेगा।
4- टाइल्स को साफ करने के लिए बाथरूम क्लीनर का इस्तेमाल करें। परंतु ध्यान रखें की हाथों में ग्लफ्स पहनकर ही इन्हें छुए और ध्यान रखें इसके छिंटे आंखों में ना जाए यदि गलती से यह आंखों में चला जाए तो तुरंत साफ पानी से धोएं और डॉक्टर को जरूर दिखाएं।
छोटी-छोटी चीजों का ध्यान रखकर इस दिवाली साफ-सुथरे घर में माता लक्ष्मी के आगमन की तैयारी करें। आप सब को दिवाली की शुभकामनाएं।

कल एक शादी में जाना हुआ, पतिदेव के मित्र भी परिवार समेत थे। गाड़ी में मेरी दो साल की बेटी आगे से पीछे कर रही थी कि मुझे कुछ अजीब सी स्मेल आई । मैंने बेटी से पूछा "बेटा पॉटी आयी?" मेरी बेटी जो अभी पूरा बोलना नहीं सीखी उसने अपनी तोतली ज़बान में सिर्फ इतना कहा "ना ना" और फिर खेलने में मशगूल हो गई ।
अब उनके मित्र की पत्नी के निशाने पर मैं थी "हाय हाय, दो साल की हो गई अभी भी बताती नहीं है सु सु-पॉटी के बारे में?"
मैंने कहा "नहीं, हो जाने के बाद बताती है"।
"इतनी बड़ी हो गई (मुझे तो आज ही पता चला कि हाय मेरी बेटी बड़ी भी हो गई..??) अब तो बताना चाहिए ना। मेरी बेटी तो सवा साल की उम्र में ही सीख गई थी। मैंने तीन चार दिन उसे बताया कि सु सु-पॉटी आए तो मम्मा को बताना। शुरू में नहीं बताया, एक दिन दो झापड़ लगा दिए। तब से आज तक हमेशा बताती है।" भाभीजी ने अपना अनुभव मुझसे बांटा।
"हाँ, पर अभी बोलना नहीं सीखी ना (अब ये अभी तक बोलना नहीं सीखी इसका भी बुरा उन भाभी जी और मेरे कई शुभचिंतकों को लग रहा है) और कोशिश तो हमने भी बहुत की है पर अब जब वो नहीं बोलती तो क्या कर सकते हैं। धीरे धीरे सिख जाएगी।" मैंने हो सके उतनी नरमी से बात की।
"तो क्या हुआ बोलना नहीं सीखी। इसमें तो दो शब्द बताने होते हैं। अभी कुछ महीनों में स्कूल जाने लगेगी। फ़िर वहाँ से शिकायतें आएगी की आपकी बेटी ने पॉटी की है। कितना गंदा लगता है इतने बड़े बच्चे ना सीखे तो।" उनकी बातें सुन मेरा दिल बैठा जा रहा था कि जिस ज़िगर के टुकड़े को उसकी शैतानियों की वजह से हम बड़े नहीं होने देना चाहते उसे ये मोहतरमा जबरदस्ती बड़ा ही घोषित करती जा रही है।
"हाँ ! बात तो आपकी सही है पर मुझे अभी स्कूल नहीं भेजना। जब वो बोलने लगेगी तब अपने आप बताएगी। अब मारकर ही तो बच्चों को सब कुछ सिखाया नहीं जाता ना" मैंने थोड़े से कड़े आवाज़ में अपनी आखरी सफाई पेश की (क्योंकि दिमाग का बॉयलर अब किसी भी वक़्त फटने की कगार पर था) पर लगता था उन भाभीजी के हथियार अभी कम नहीं हुए थे।
"अरे बच्चों को ये सब अभी से सिखाना पड़ता है। जल्दी सिख जाए तो हम भी तो फ्री हो जाते हैं। और ऐसे किसी के घर पर जाकर कपड़े गंदे करे तो कितना शर्मिंदा होना पड़ता है। सिखाओ कुछ अपनी बेटी को।" मुझे आज ही पता चला कि मेरे मासूम से फूल की वजह से मुझे शर्मिंदगी भी उठानी पड़ सकती है।
ड्राइव कर रहे पतिदेव ये सब सुन रहे थे। पत्नी का दर्द और बेटी को दिए जानेवाले उलाहनें शायद उनकी बर्दाश्त के बाहर थे। उन्होंने ही जवाब दिया " भाभी अगर बच्चे इतने जल्दी ही सब सीख जाते तो फिर माँ-बाप की क्या ज़रूरत? आज नहीं तो कल सीख जाएंगे। ज़्यादा से ज़्यादा क्या होगा, डायपर का ख़र्चा बढ़ेगा। मैट्रेस गंदे करेगा तो नए आ जाएंगे। जब हम इतना सब ख़र्चा अपने ऊपर कर सकते हैं तो बच्चे के लिए और ज्यादा ही सही। और हमें कोई जल्दी नहीं अपनी बेटी को बड़ा करने की।" मिरर से उन्होंने मेरी ओर देखा और आंखों से ही जैसे कहा कि तुम चिंता मत करो लोगों की बातों से। मैं हूँ ना तुम दोनों के लिए। यकीन मानिए इतना सुकून मिला।
दूसरा एक किस्सा बताती हूँ। सोसाइटी के गार्डन में बेटी को लेकर खेलने जाती हूँ। एक दिन दूसरे विंग की एक सहेली मिली जिसका बेटा अभी तीसरी कक्षा में पढ़ता है। मेरी बेटी झूले से मस्ती कर रही थी और मैं संभालने की कोशिश। उतने में सहेली ने कहा "इसे कुछ सिखाती भी हो या नहीं?" मैंने पूछा क्या सिखाना है?"
"अरे ABCD ऐसा कुछ सिखाओ। अब बड़ी हो रही है फिर कब सीखेगी। थोड़ी मेहनत अभी से किया करो, घर पर ही तो रहती हो। कल को स्कूल भेजोगी तो फ़िर दूसरे बच्चों से पीछे रह जायेगी।" मोहतरमा ने आज ही मेरी गुड़िया को कॉम्पिटिशन की रेस में शामिल कर दिया।
"नहीं मैंने इसे ABCD नहीं सिखाई और सिखानेवाली भी नहीं। मैं उसे खुद से ख़ाना ख़ाना सिखा रही हूँ। मग से दूध पीना सिखा रही हूँ। खाने के बाद अपनी प्लेट किचन में रखना सिखा रही हूँ। सुबह शाम मंदिर में पूजा करते वक़्त अपने पास बैठना और भगवान को हाथ जोड़ना सिखा रही हूँ। अपने खिलौने खुद समेटना सिखा रही हूँ। हालांकि वो कितना सीखी वो उसके मूड पे डिपेंड करता है, मैं तो सिर्फ कोशिश करती हूँ। बाकी ये पढ़ाई वढाई के लिए भी मैं ही मेहनत करूँगी तो स्कूलवाले क्या करेंगे।" मैंने दूसरे ही पल अपनी बच्ची को उस कॉम्पिटिशन से बाहर कर दिया।
मुझे काफी पुराना किस्सा भी याद आया जब मैं कॉलेज में पढ़ती थी और एक दिन दीदी की बेटी को स्कूल पिकअप करने गई थी। तब वो शायद नर्सरी में थी। बाहर खड़ी मम्मियां एक दूसरे से बातें कर रही थी " यार देखो ना ये स्कूलवाले किताबें भी घर पर नहीं देते। अब बच्चों को कुछ पढ़ाना हो तो कैसे पढ़ाएं?" दूसरी माँ बोली " अरे मैंने तो किताबों का एक सेट ख़ुद से खरीद लिया है। घर पर उसी से पढ़ाती हूँ। घर पर ना पढ़ाओ तो बच्चे स्कूल से आकर किताबों को हाथ भी नहीं लगाते।" मैं वहाँ खड़ी खड़ी सोच रही थी 3-4 साल के बच्चों को पढ़ाकर इन्हें क्या आज ही नासा के उपग्रह पर भेजना है? मन तो किया की कहूँ बहन जी आप बच्चा पेट में था तब से पढ़ाई शुरू कर देती तो अब तक तो वो मंगल मिशन पार कर चुका होता। और गुस्सा तो इतना आया कि ऐसी माँओं को मंगल पर भेज देना चाहिए, वो भी बिना दानापानी के।
मुझे समझ नहीं आता हम किस दिशा में जा रहे हैं? किस कॉम्पिटिशन में अपने बच्चों को डाल रहे हैं? किस जगह 2-3 साल का बच्चा पीछे रह जायेगा? क्यों हम उनसे उनका बचपन छीन रहे हैं?
ऐसे हालातों से मुझ जैसी कई माँऐं गुज़री होंगी जहाँ माँ-बाप से ज़्यादा दुनियावालों को चिंता है कि ये नहीं आता, वो नहीं आता, कब सीखेगा? बाद में परेशानी होगी वगैरह वगैरह..आपका बच्चा अभी बैठना नहीं सीखा, मेरा तो 5 महीनें में बैठने लगा था, अभी चलना नहीं सीखा, मेरा तो दस महीने में चलने लगा था, अभी तक बोलना नहीं सीखा, मेरा तो डेढ़ साल में सब कुछ बोलने लगा था। अभी तक फीडिंग करवा रही हो, मैंने तो एक साल में ही छुड़वा दिया था। अभी भी बोतल से दूध पी रहा है, मैंने तो कभी बोतल नहीं दी। अभी तक ख़ाना नहीं सीखा, मेरा तो माँ के पेट से ही दांत लिए पैदा हुआ था और पता नहीं क्या क्या।
ऐसे वाहियात सवाल करने से पहले लोग ये क्यों नहीं सोचते कि वो एक माँ को कितना आहत कर सकता है? ये क्यों नहीं समझते कि सब बच्चे एक जैसे नहीं होते, कोई कुछ जल्दी सीखता है तो कोई कुछ और जल्दी सीखता है। और अंततः उम्र के हिसाब से हर बच्चा अपनी क्षमता अनुसार सब कुछ सीख ही जाता है। सब कुछ जल्दी सीखकर कौनसे झंडे गाड़ने हैं हमें?
हर माँ-बाप अपने बच्चों को श्रेष्ठ देने और सिखाने की कोशिश करते हैं पर ज़रूरी नहीं कि बच्चा आपकी हर ख्वाहिशों पर ख़रा उतरे। उन्हें उनका बचपन जीने दें। आपकी सहूलियत और जल्दी फ्री होने के चक्कर में बच्चों को समय से पहले बड़ा कर देना कहाँ तक उचित है? बच्चों को सुविधाएं कम देंगे तो चलेगा पर उन्हें उनका बचपन लौटा दीजिये।
मेरी बेटी 2 साल की हो चुकी है फिर भी हम दोनों पति पत्नी को लगता है कि हमारी लाडली बहुत जल्दी बड़ी हो गई । कहाँ वो बेड में पड़े पड़े हमें देख मुस्कुरा देती थी। उसकी पहली स्माइल की फ़ोटो अभी भी मोबाइल के स्क्रीन पर है। जब पहली बार घुसकना सीखी थी। जब पहली बार उसने चलने के लिए कदम उठाया था, पहली बार अपनी मम्मा का पजामा या पापा का पेंट पकड़कर खड़े होने की कोशिश की थी। पहली बार दहीं खाने के बाद जो मुंह बनाया था। पहली बार जब मम्मा पापा बोली थी। कितने हसीन लम्हें थे वो जब ये सब पहली बार हुआ था। फिर क्यों मैं चाहूंगी कि मेरी बेटी जल्दी जल्दी सब कुछ सिख जाए। उसके साथ तो हमें अपना बचपन जीने का मौका दुबारा मिलता है। कृपया उसे हाथ से जाने ना दें।
दुनिया के लिए वो भविष्य में कॉम्पिटिशन की रेस में दौड़नेवाला घोड़ा हो सकता है पर हमारे लिए वो सिर्फ हमारा बच्चा है। उसे बच्चे की तरह ही बड़े होने दीजिए। क्योंकि बचपन कभी लौटकर नहीं आता। और किसी भी माता-पिता से ऐसे सवाल करने से खुद को रोके की ये क्यों नहीं और वो क्यों नहीं। बच्चा उनका अपना है, उन्हें तय करने दीजिए कि वो किस तरह की परवरिश देना चाहते हैं अपने अंश को।
नई माँओं से भी कहना चाहूँगी की लोगों की बातों को ज़रा सी भी तवज्जो ना दें। हो सके तो उसे अनसुना कर दें और नहीं सुन सकते तो करारा जवाब उसी पल दे दे ताकि अगली बार कोई आपको आपके बच्चे की कमियाँ न गिनवाए।

1. Matar ki Kachori
Matar ki kachori is one of the classic delicacies everyone enjoys, especially in north India – it is a perfect snack to indulge in on a cold winter evening. You can have it with a hot cup of chai or with ketchup, green chutney, or curd.
Ingredients
For the kachori dough
All-purpose flour (maida) - 1 cup
Semolina (rawa) - 1 tsp
Water
Oil
Salt to taste
For the stuffing
Fresh peas - 2 cups
Grated ginger - 1 tsp
Thinly sliced green chilli - 1
Cumin seeds - ½ tsp
Turmeric - ¼ tsp
A pinch of asafoetida
Red chilli powder - ½ tsp
Coriander powder - ½ tsp
Garam masala powder - ½ tsp
Dry mango powder - ¼ tsp
Chopped coriander leaves
Crushed fennel seeds - ¼ tsp
How to Make
Stuffing
Boil or steam the peas and allow them to cool.
Take the boiled peas, ginger, and chopped chilli in a blender.
Blend them well to form a coarse paste and keep aside.
Heat 1 tsp of oil in a wok on a medium flame.
Once the oil heats up, add cumin seeds and asafoetida, and let them splutter.
Add blended peas to it and stir well.
Add dry spices, salt, and coriander leaves to the mix and give it a nice stir.
Once the mixture is cooked, turn off the flame.
Dough
Take semolina (rawa) and all-purpose flour (maida) in a large bowl, add salt and some oil, and mix well.
Slowly add water to it, and knead well to form a dough. Keep the dough aside for 15 - 30 minutes.
Extract a small ball from the dough and place it on a rolling board.
Dust some maida on it, and roll the ball to a medium-sized circle using a rolling pin.
Place a scoop of the prepared stuffing in the centre of the flattened dough and brush some water on its edges.
Next, bring all the edges together and pinch them.
Dust some maida on it again and roll it to get a medium-sized disc.
Repeat the steps to make a few more.
Heat oil in a deep wok on medium flame; once the oil is hot, drop a rolled kachori in it from the edges of the wok.
Deep fry it till it turns golden brown.
Fry all the kachoris in a similar fashion, and serve hot with green chutney.
2. Nimona
We know the name nimona may sound strange, especially if you’re hearing the name of this yummy matar recipe for the first time, but once you try and taste it, we are sure you’ll make it every winter. Yes, we are emphasising on winters because nimona tastes best when made with fresh green peas harvested in the winter season. So, here is the recipe for this favourite delicacy of Uttar Pradesh.
Ingredients
Chopped onion - 1
Chopped potato - 1
Finely chopped tomato - 1
Fresh green peas - 2 cups
Mustard oil - 2 tbsp
Grated ginger - ½ tsp
Chopped garlic - 1 tsp
Chopped green chillies - 2
Bay leaf (tejpatta) - 2
Cloves - 4
Cumin seeds - 1 tsp
Turmeric - ¼ tsp
A pinch of asafoetida
Red chilli powder - ½ tsp
Coriander powder - ½ tsp
Garam masala powder - 1 tsp
Water
Chopped coriander leaves - 2 tsp
How to Make
Blend the chopped onions, tomatoes, garlic, ginger, and green chillies in a blender to make a fine paste. Keep aside in a bowl.
Next, grind green peas to form a coarse paste. Remember - do not add water while grinding.
Take 2 tbsp of mustard oil in a pan and heat it on a low flame. Once the oil is hot, add chopped potato cubes to it and sauté them till they turn golden.
Keep the potatoes aside on a plate lined with a kitchen towel, allowing it to absorb the excess oil.
To make the nimona gravy, take the same pan. You can add more oil to it if it seems less.
Heat the oil and add bay leaves, cumin seeds, and cloves to it. Let them splutter.
Add the ground onion and tomato mixture to it, and stir it well.
Keep sautéing the mixture until it turns lumpy, and you notice oil releasing from the sides of the mixture.
Now add all the dry spices to it and mix well.
Finally, add the coarse peas’ paste and salt as required, and mix well with the onion-tomato masala.
Add water as required and cover the pan with a lid, allowing it to simmer. It should take 10 - 15 minutes for this matar recipe to cook to perfection.
Stir it in between and add more water if required.
Once it’s cooked, add chopped coriander leaves and turn off the flame.
Serve hot with phulkas.
3. Methi Matar Malai
While nimona tastes delicious, you’d not make it for a house party, would you? If you want to cook something special and fancy with peas, here is a perfect gravy dish that you can make easily.
Ingredients
Chopped fenugreek leaves (methi) - 2 cups
Boiled green peas - 1 cup
Fresh cream - ½ cup
Milk - 1 cup
Garam masala - 1 tsp
Oil - 2 tbsp
Sugar - ½ tsp
Salt as required
Water
Chopped coriander leaves (for garnishing)
For the paste
Chopped onion - 1 (medium-sized)
Chopped green chillies - 1 - 2
Grated ginger - ½ tsp
Cumin seeds - 1 tsp
Cashews - 1 cup
Chopped garlic - ½ tsp
Small cinnamon sticks - 2
Cloves - 4
Green cardamoms - 2
Black peppercorns - 2
How to Make
Preparation
First, wash the chopped fenugreek leaves, then sprinkle ½ tsp salt on it. Keep it aside for 15 minutes.
Later, squeeze out the excess water from the methi leaves.
Paste
Heat oil in a pan on a low flame; once it’s hot, add cumin seeds to it.
Once the cumin seeds change colour, add cinnamon sticks, cloves, cardamoms, and peppercorns to it.
Next, add ginger, garlic, and green chillies, and sauté.
Add chopped onions and sauté them until they turn soft and translucent. Turn off the flame, and transfer the onion mixture on a plate, allowing it to cool.
Once it cools, add it to a blender with cashews, and blend to form a smooth paste.
Methi Matar Malai
Heat oil in a pan on a low flame. Once the oil is hot, add cumin seeds and wait till their colour changes.
Then add the prepared onion and cashew paste to it and keep stirring it.
Cook the mixture for 5 - 10 minutes until it starts giving an aroma, and you see oil releasing from the sides.
You can add a little water if the mixture sticks to the pan.
Add chopped fenugreek leaves or methi, and sauté for 3 minutes.
Add half a cup of water and let it simmer for 5 minutes.
Finally, add boiled peas, fresh cream, and milk (if necessary), and let it simmer for 5 minutes.
Add sugar and salt to taste.
Garnish with coriander leaves and your methi matar malai dish is ready!
Serve hot with phulkas, parathas, or naan.
4. Peas and Mint Dip/Puree
Who says you can make only Indian delicacies with peas? If you like indulging in all kinds of foods from all parts of the world, here is one recipe which is popular all over the world! Just like the ever-popular avocado dip, you can make a dip or spread with peas as well. Here goes the recipe –
Ingredients
Fresh peas - 2 cups
Water - 2 cups
Chopped mint leaves - 8
Chopped garlic - ½ tsp
Salt to taste
Pepper
Butter
How to Make
Take water in a pan and bring it to a boil.
Add peas, mint leaves, and salt, and boil for 5 minutes.
Drain the water and let the peas cool.
Grind together the peas, mint leaves, and garlic.
Transfer it to a bowl, and add salt and butter to it, and mix well.
Spread it on toast or bread slices, and enjoy!
5. Matar Barfi
Want to make a dessert with peas - how about matar barfi? Here is a simple way to make matar barfi. So, take note of this recipe and try it yourself!
Ingredients
Ground peas - 2 cups
Ghee or clarified butter - 2 tbsp
Powdered cashews - ¼ cup
Powdered sugar - 1 cup
Grated khoya (mava) - 1 cup
Cardamom powder - ½ tsp
Edible silver (Vark)
How to Make
Roast the cashew powder and keep it aside.
In a non-stick pan, roast khoya until the ghee separates.
Once it’s done, take the ghee in the pan, heat it on a low flame, and add the ground peas. Keep stirring continuously to reduce the moisture in the mixture.
Add khoya and give the mixture a nice stir.
Add sugar, cardamom powder, and cashew powder, and keep stirring it until the mixture becomes lumpy.
Turn off the flame.
Grease a plate or tray with ghee, and pour the peas’ mixture on it, spreading it evenly on the plate.
Allow it to cool and cut it into squares or any shape you like.
Stick vark on it and satiate your sweet tooth.
