1 large wheat tortilla shell

2 tablespoons feta cheese
2 tablespoons sliced olives
1 tablespoon chopped green onions
Method
Step 1
Heat a large skillet over medium heat.
Step 2
Lightly spray oil in the skillet.
Step 3
Place whole wheat tortilla shell in skillet.
Step 4
Lay the feta, sliced mushrooms, green onions, and roasted red peppers on the wrap.
Step 5
Allow to cook for 30 seconds- 1 minute or until wrap is lightly brown and the cheese begins to melt.
Step 6
Remove wrap from skillet and add spinach, cucumber, and olives.
Step 7
Wrap tightly and slice.
Step 8
It tastes excellent with a little hummus on the side!

The Rainy season brings back all the memories of our childhood days and each one of us has speacial joy of rainy season
It was drizzling since the morning. Sabita had just finished her daily chores and had taken a rest in the afternoon when she heard the increase of the downpour. She looked from the window the rain had increased and so its sound. She had always enjoyed watching rainfall from the window. There was a quiet smile on her face. Then she had the urge of having pakoras, she looked at the clock it was almost 5 in the evening, she thought to herself if she start preparing now the hot pakoras will be ready by the time her son and her husband will be home.
She started cutting vegetables and started to prepare the mixture for the pakoda. She kept the kadhai on the stove and put the flame on. Now she started to fry the first batch of pakoda looking at the clock. It was almost 5:30 and her son was not home. She checked her phone but there was no message nor any missed call. Her first batch of pakodas was ready. She tasted one, and it was perfect for such rainy day. She put the flame to simmer and called her son. He had been to his friend’s house. “Hello maa!” came the voice from other side. “ Hello, when are you coming home, its raining and getting darker” exclaimed Sabita. “I have made pakodas for you”
“Oh! Maa. We are having a group study to complete this science project I want to stay at Rahuls place only. I will have those pakodas next day. And its raining very heavily right now”. Said Pravin and kept the phone.
Sabita was disheartened. How she had wished to see the delight on the face of drenched son after seeing the hot pakodas. She took a long sigh and continued with the next batch. She thought she would complete it by the time her husband will be back and can have a nice tea time with hot pakodas. Her phone rang, she was frying her last batch now, it was her husband calling.
“Hello” said Sabita keeping the phone on loudspeaker. “. Hello!” said her husband “Listen, Don’t prepare dinner for me. I have meeting today and will be late dinner are arranged here only.” She took a long breath and said “Ok” and ended the call even when she wanted so much to tell her to come home early and say lets have some hot pakoras together.
She finished making the pakodas and looked at for a while not knowing what to do next. Then she made a cup of masala tea for herself. She took the cup of tea in one hand and the bowl of pakodas on the other and sat on the sofa near the window pane and gazed at the rain and went back to memory lane back to the days of her childhood. When her mother use to make pakodas for her and her siblings so that they would remain inside during the rain. How they use saviour the pakoras and fight over the last piece.Then beautifully her mother would break it into equal pieces to end their fight.
