1. Rolls with a Chicken Filling
Also known as enchiladas, this is a perfect recipe to bring the day to an end as a family.
What You Will Need
4 boneless and skinless half chicken breasts
8 – 10 rotis
Chopped onion
Shredded cheddar cheese
Tomato sauce
Minced garlic clove
Dried oregano
Dried parsley
Taco sauce
Chopped peppers
Sour cream
Water
Salt
Chilli powder
Pepper
How to Prepare
Prepare the oven by heating it to 180 degrees
Take a non-stick pan and heat oil in it. Place the chicken and let it cook so that its tenderness and the pink colour disappears.
Drain away the excess fat from the chicken breasts. Place it on a plate and cut the chicken into small pieces. Put the pieces back in the pan and cook further.
Begin by adding parsley, onion, sour cream, oregano, pepper, and cheddar cheese. Let it cook until the cheese begins to melt.
Add tomato sauce, chopped peppers, chilli powder, garlic and salt and mix it all well together.
Place the tortillas in a plate and roll chicken inside them in equal amounts. Place them on the baking dish.
Add toppings of cheddar cheese and taco sauce to them and place them in the oven.
Let them bake uncovered for around half an hour and then cool down.
Time required – 90 minutes

2. Chicken Crepes with Asparagus
These might take some time to prepare but these chicken crepes have the perfect balance and combination of protein, fibre, and many other nutrients, making it a great breakfast for a weekend.
What You Will Need
A cup of asparagus
A couple of eggs
Worcestershire sauce
Sugar
Whipping cream
Cooked ham
A cup of chopped cooked chicken
Condensed chicken soup
Milk
Grated parmesan cheese

How to Prepare
Take a bowl and crack open the eggs in it with some milk. Beat the mixture together. Add sugar and flour to it and beat it well. Place the bowl in the fridge, covered, for an hour.
Take a pan and grease it slightly. Heat it and add the crepe batter in the centre. Spread it with a spoon to cover the entire pan.
Once the top part is dry, flip it and cook the other side for a few seconds. Repeat the process to make as many crepes as required.
Take a bowl and add chicken soup, nutmeg, and the Worcestershire sauce to it. Mix it properly and take a small portion of this in a separate cup.
In the existing bowl with the mixture, add asparagus, ham and chicken and mix it properly. Take two spoons of this mixture and pour it on the crepe gently. Roll the crepe to cover it tightly.
Grease a baking tray and place the crepes on it with the open side below.
Pour the mixture from the cup onto the crepes and add some grated parmesan cheese on top of it.
Place the tray in the oven and bake it for about half an hour at a temperature of 190 degrees.
Mix the cream and mayonnaise and spread the mixture over the crepes. Add more cheese if required. Broil the crepes for 5 minutes until they become golden brown.

3. Chicken Soup With Noodles
A nice healthy chicken soup is the perfect comfort food for any illness as well as for boosting strength.
What You Will Need
A couple of cups of egg noodles
Around 12 cups of chicken broth
Poultry seasoning
Vegetable oil
Cornstarch
Chopped celery
Chopped onion
3 cups of cooked chicken diced in cubes

How to Prepare
Take a bowl and mix water with some salt in it. Boil it. Once it starts boiling, add egg noodles and vegetable oil and let it boil for another ten minutes. If the noodles seem cooked, stop the heat and drain away the water.
In a pan, put the broth, salt, and seasoning together. When it boils, add celery and onion to it. Stir it well and then cover with a lid. Let it sit on a low flame for about 12-15 minutes.
Take a small bowl and add water with some cornstarch. Let it dissolve fully, then add the mixture to the soup slowly, while stirring continuously.
Once the required consistency is reached, mix the noodles and stir properly, letting it heat for a while.
Time required – 45 minutes

4. Chicken and Spinach Open Tart
Also known as a quiche, this is yet another nutritious item that is well deserved to be had at the beginning of the day. Keeping frozen chicken in stock helps reduce the preparation time on this.

Milk

Unbaked pie crust

Cumin powder

A couple of cups of chicken broth

Drained and rinsed cannellini beans

How to Prepare
Read the hash brown packet for instructions and cook them accordingly.
Take a pan and cook the sausage patties in it until they start turning brown.
Take another pan and heat it on a medium flame. Take the rye bread slices and butter them on one side. Place the buttered side down on the pan.
Add cheese slices on each bread slice, along with sausage patty, cheddar cheese and hash brown potatoes. Cover these with the other bread slices, keeping the butter side open.
Turn them so that each buttered side is cooked to a light brown colour. The cheese will be melting as well.

What You Will Need
4 boneless skinless chicken breasts

Deseeded and diced bell peppers

Apple cider vinegar

How to Prepare
Prepare an outdoor grill by preheating it.

Travel Therapy : My trip to Kashmir - Heaven on Earth! Explore nature with me!
Holiday is one of the best ways to get refreshed and feel rejuvenated. Most of you will agree to this. Whenever you travel, even for just 3-4 days it will make you forget your stress and transport you to another world. Saying goodbye to such memorable trips is often difficult. But, the memories are so beautiful that they hold a special place in our hearts forever. For me, trip to Kashmir was one such memory. Here, I share some wonderful moments from my trip with you!
Kashmir! The name itself brings to your mind images of snow clapped mountains, lush green valleys, flowing water beds, houseboats and so on. I was pretty excited and looking forward to traveling to Kashmir with my husband and my masis family in the month of April two years back. On arrival, we first visited Srinagar the capital of Kashmir famous for its Dal lake and houseboats. Our first stay was in the houseboat. The houseboat was a very pretty structure and had some unique wooden carvings and designs in the interior giving you a feeling of staying in some kind of a palace! The curtains, the furniture everything gives you a home like feeling. There are plenty rooms in one house boat so, both our families stayed together. A small garden was attached to it which made it more beautiful. The famous Shikara ride was the best thing. Sitting in a Shikara and watching the scenic mountains and waters, while dressed in a Kashmiri outfit! Yes we clicked pictures in the traditional outfit. Water ski activity took place in the lake plus I was lucky enough to have witnessed moon rise while on the Shikara ride, a rare sight! Next in line was, Gulmarg, Sonmarg and Pahalgaam. A resort right in the heart of the valley, such a picturesque view. Here we were sitting in the lap of the nature! Zero point was so much fun. It's a place where you go on the snow, and enjoy plenty of activities. We did ice ski and took rides on the snow scooter. It was the most memorable day. Wearing huge gum boots and walking on the snow, falling here and there, making snowballs while shivering! It was one crazy day!
Other activities included going on a horse ride to reach a place called Mini Switzerland. You ride on ponies there, as they can cross the crisscross mountain paths with ease! Really horses are very talented indeed! It was raining when we reached Switzerland. Breathtaking views awaited us, we got wet but enjoyed throughly. Other places included Betaab Valley, a calm and serene grassland offering snowmountain views and rivers flowing by! Then we did another activity wherein you walk on the snow using a stick for support, you push the stick in the snow and move ahead! It was like snow trekking. This place is known as Chandanwari. You can go till the top and enjoy the beautiful snow on the way. The wonderfull cable car rides awaited us next. It takes you to a great height, as you reach various stations the cold increases, the final station has a number of activities on the snow. I was just happy being with nature! Any trip is incomplete without local shopping! The famous Kashmiri kahwa, kesar and walnuts that's what we purchased. The local hand embroidered dresses are a specialty too. We had the famous apple juice also. The Kashmiri biryani and wazvaan are famous local dishes. Other sightseeing included Shalimar gardens, Tulip gardens and the Mughal gardens. The Hazrat Bal suitated in the dal lake is a very beautiful mosque.
Well, this is just a short summary of the trip. It can go on and on. The trip was for 10 days.All I can say that the term "Heaven on earth" is the apt word for Kashmir. Nature has got immense healing power, no matter how much the technology advances nobody can beat the power of nature's way. Once you're in sync with the nature you will surely forget your sorrows and stress and marvel at this magical creation of God. When I close my eyes, even at present I can feel that I was so happier and healthier around nature, it didn't matter that I was not online, or checking messages as I was busy exploring the glory of God!

Undiagnosed Lactose Intolerance in Babies Makes Them Suffer a Lot
Yes, my baby is lactose intolerant and we didn't know it! She was suffering a frequent stomach infection and we assumed that it was caused by keeping things in her mouth. It was a recurring event every fortnight.
So, what is lactose intolerance? Lactose is the protein present in cow's milk which is not digestable by some babies. It leads to stomach upset, loose motion, mucus in the stool and stomach ache. They also lose their appetite. Bloating and gas is another problem. Redness in the anal part is another symptom. My baby is a preterm baby, so her digestive system was not completely developed. Lactase is an enzyme produced in the small intestine which is responsible for digesting lactose (sugar) present in the milk. In preterm babies, due to reduced lactase production, it led to lactose intolerance.
When I was breastfeeding her, she used to pass loose green stool and was very cranky. I tried everything but nothing really consoled her. When we visited the doctor, after the stool test it was recognized as lactose intolerance. So, the doctor suggested me not to drink cow's milk and to drink buffalo's milk. It solved the problem. The doctor also said that this situation is temporary and there is no need to worry.
When she was 6-month-old, I introduced her to solid food. I never gave her pasteurized dairy milk until she completed one year. My milk supply was very low, so I had to feed her formula. As we had relocated to another city because of my husband's work, we had to change the doctor. I asked the new doctor for prescribing a good formula. I told him about her history of lactose intolerance but he said it is temporary. The new formula was not lactose-free.
My baby started liking the formula and was happy to drink that. But again, the stomach problem resurfaced. The doctor prescribed antibiotics. My baby used to cry a lot in the night, she was not having her proper meals and she was unable to sleep. The new doctor said that it is gastroenteritis. After forcefully feeding her medicine for 5 days, she used to recover but after 15 days, the same problem. I reminded the doctor about her history of lactose intolerance but he used to say my baby is having an upset stomach because of keeping things in her mouth.
When my baby reached one year of age, I gave her dairy milk which contains cow's milk. She used to not show symptoms the same day. After 2 days the same thing started to repeat. As a mother, I was unable to see my baby suffering. I didn't know what to do. I used to ask the doctor to do a stool test to check why she is getting a recurrent stomach infection but he said it is because of keeping things in her mouth.
I was very upset I decided to change the doctor. It helped me and my baby. The new doctor said to change the normal formula to lactose-free formula and told me to avoid dairy products containing cow's milk. My baby is now 18 months old and I am giving her lactose-free formula once or twice a day since she was 13 months old and she is doing good now.
