Sawdust Pudding / Serradura
‘Serradura’ aka sawdust pudding is a Portuguese sweet delight. It comprises of alternate layers of powdered tea biscuits and flavoured cream. The powdered tea biscuits give it sawdust like look, which is where the dish derives its name from. The best thing about this dessert is that it looks great and needs just a couple of ingredients to make it. For best taste, it should be made at least 4-5 hours prior to serving; overnight is even better.

100 g Marie biscuits
300 ml cream
1 tbsp butterscotch syrup
100 ml condensed milk
1 tsp vanilla extract
Cocoa powder for dusting
Method
Step 1
Powder the Marie biscuits finely in a mixer grinder. Set aside.
Step 2
Whip cream till it forms soft peak. Add the butterscotch syrup, condensed milk and vanilla extract. Whip again and fill it into a piping bag.
Step 3
Take 6 serving glasses and pipe a layer of the flavored whipped cream, followed by a layer of powdered biscuits. Repeat the layers with the cream layer as the topmost layer.
Step 4
Refrigerate it for at least 6 hours. It is best to make it the night before the day of serving.
Step 5
Just before serving, dust some cocoa powder. Serve and enjoy!
